Dal ricettario di Fofò.

Spaghetti al sugo con granchietti. Spaghetti with tomato sauce and small crabs.

Ok.. questa è una ricetta per gente forte...
andate in pescheria ed acquistate dei giovani granchietti saltellanti, io di solito ne prendo 600 grammi per 4 perchè li adoriamo. a casa gli date una scacquatina sotto il rubinetto..

buy some young jumpy crabs, (I usually buy 600 grams for 4 people, we love them!) at home rinse them out...



......nel frattempo preparate il solito trito di prezzemolo, aglio e peperoncino, far soffrigere e aggiungere della buona passata e/o pelati.... dopo una ventina di minuti sul fuoco aggiungete i granchietti..si , lo so, devono essere vivi e quindi alle persone delicate consiglio di buttarli in pentola e chiudere subito il coperchio..... Cuocere così per una ventina di minuti e lasciare riposare prima di aggiungere gli spaghetti e servire.
Io di solito preparo il sugo per la cena al mattino oppure la sera per il pranzo del giorno dopo. se lasciato riposare il sughetto prenderà un sapore delizioso.
....in the meanwhile prepare the usual mined parsley + garlic+ hot pepper, let it cook a little in Extra vergine olive oil, then add the tomato sauce and leave it on gentle fire for about 20 mins..after this time you need to throw in the pan the crabs..yes I know they have to be alive so my advice to tender hearted people is :throw them in and close the top! leave it to cook for another 20 mins., then let it stay for a while before serving with spaghetti.
I usually prepare the crab sauce the evning before if I ned it for a lunch or in the morning if I need it for a dinner. When the sauce "rests" it has a better flavour.

Piccolo aneddoto: la prima volta che li ho cucinati mio figlio ha visto i granchietti vivi e ha fatto un pianto disperato, mi ha minacciato di tutto se li avessi assassinati nel sugo, e non si riusciva a calmare.....la sera però non ha potuto fare a meno di mangiarli con gusto ed è uno dei suoi piatti preferiti!
Small anectode: the first time I cooked the crabs my son saw them alive and started crying desperately, he threatened me of everything if I would kill them, e he wouldn't calm down.... but for dinner he couldn't stop eating them and now it is one of his favourite!

  1. Questa è proprio da provare quando rientro...non li ho mai fatti! Forse l'ultima volta che li ho mangiati avevo l'età di Joey. Ma li lasci interi? Si riesce a rompere facilmente il guscio??

  2. si , sono piccolini, li devi lasciare interi..solo che devi andare a tentativi perchè non li pescano tutti i giorni, per quello è bello: li cucino solo quando li trovo!
    Poi li rompi facilmente, non c'è un granchè da mangiare ma ti lecchi le dita!!!
